How to use white tea leaves to make homemade iced tea into gourmet iced tea


Remembering that white tea antioxidants may be beneficial to our health.

I asked my tea blender friend about how to make iced tea using white tea. She suggested starting with a loose leaf white peony tea. Her instructions follow:

White peony tea normally brews for 2-4 minutes using one tablespoon loose leaves per 8 ounce cup of filtered water. I brew for ice tea using a half tablespoon more loose leaf tea and steep for 4-6 minutes. Let cool for 20-30 minutes and chill. You can make the tea early in the morning, let it sit out and cool down for 2 hours and then refrigerate.

Serve white peony tea in tall iced tea glasses. Use your imagination when garnishing this homemade iced tea. Mint leaves, lemon slices, orange slices, skewers with raspberries, blueberries or pineapple all make colorful tasty garnishes.

Things to remember when brewing tea



If you steep white loose leaf tea beyond 8 minutes it will get bitter.
Always use good quality water that is 185 degrees
Always use a timer when brewing this or any loose teas.

Tip: Always make enough tea for the day or at the most 2 days. Tea in the refrigerator will act like baking soda and absorb flavors.
