Tea Sandwiches on 3 teir tray

When we were planning the party menu, I checked my recipe files. I looked to see what ingredients I had on hand. I added what I would need to buy to my grocery list.

Grilled Chicken Salad

Mint Cucumber

Ham and Swiss

Now I'm going to share the recipes with you. I hope you like them. Most women I know collect recipes. Men too often enjoy cooking. I'm betting you've heard the saying "real men don't eat quiche." That saying is not true, lots of men eat quiche. They eat tea sandwiches too.

Grilled Chicken Salad

Makes 12

Directions

Grill chicken breasts on charcoal grill (optional)

Combine the first six ingredients

In a separate bowl combine the mayonnaise, lemon juice and curry powder

Add this to the chicken mixture and stir to coat evenly

Cover and refrigerate until ready to prepare the sandwiches

Spread each slice of bread with butter on one side

Next spread chicken salad mixture then top with lettuce

Top with another slice of buttered bread

Cut off all crusts, slice in 3 finger sandwiches

Cucumber Tea Sandwiches

Makes 12

1/4 to 1/3 cup loosely packed fresh mint leaves, chopped fine

3 tablespoons butter, softened

3 tablespoons cream cheese softened

2 seedless cucumber, cut into thin slices

Salt

8 slices of whole-wheat bread

Directions

In a small bowl combine the mint, butter, and cream cheese and stir the mixture until it is combined well

Thinly slice the cucumber and sprinkle with salt

Allow the cucumbers to drain and pat dry with a paper towel to absorb the moisture

Spread the bread slices with the butter mixture

Top 4 of them with the cucumber, distributing the cucumber evenly

Top with the remaining bread slices

Cut off the crusts and cut each sandwich into 3 finger sized sandwiches.

Ham and Swiss Tea Sandwiches

Makes 12 tea sandwiches

8 thin slices bread of your choice

4 tablespoons apricot jam (more if needed)

2 tablespoon Spicy Brown mustard (more if needed)

½ pound Black Forest Ham, sliced thin

4 thin slices of swiss cheese

Spread four bread slices with the jam

Spread four slices with the mustard

Add the ham and cheese slices to bread with jam

Top with the mustard slices

Trim the crusts from the 4 sandwiches

Cut each into 3 finger sized sandwiches
