Cranberry Orange Scones
Ingredients:
Directions: Mix dry ingredients in a bowl. Combine flour, sugar, orange peel, baking powder, salt, and baking soda. Cut in butter until the mixture resembles coarse crumbs; set aside. In a small bowl, combine cranberries, orange juice, cream, and egg. Add to flour mixture and stir until a soft dough forms. On a floured surface, gently knead 6 to 8 times. Pat dough into an 8-inch circle. Cut into 10 wedges. Separate wedges and place on an ungreased cookie sheet. Brush with milk, then sprinkle with remaining sugar. Bake at 400 degrees for 12 to 15 minutes until lightly browned.
Make a Glaze: 1/2 cup confectioners' sugar mixed with 1tablespoon orange juice and drizzle over scones.
Serve wuth Orange butter: 1/2 cup butter, softened, mix with 3 tablespoons orange marmalade

Pecan Tassies
Ingredients:
In a mixing bowl, cream together butter and cheese. Mix in flour and roll out to about ¼ inch thickness. Take a biscuit cutter and cut out 48 circles. Place in a miniature tart pan (special pans can be purchased fot this type of cookie). In a separate bowl, beat the eggs slightly and add brown sugar, melted butter, salt and vanilla. Mix in nuts. Fill each tart 3/4 full of filling. Bake at 350 degrees for 30 minutes. (try variations by substituting chopped almonds or walnuts for the pecans)
These Wafer Cookies are so good you will have to hide them from yourself until the tea party.

For a Dessert Centerpiece

In keeping with your fire and ice theme, frost cup cakes with your favorite white frosting and put on a three tiered cup cake party stand. Decorate with frosting flowers then place 3 very thin long white candles into each cupcake and light them before serving. This will make for a very memorable dessert.
Dramatic Fire and Ice Dessert
Take two simple ingredients — fire and ice (cream). This will leave a lasting impression on your guests.
For the fire part of the dessert, flames will add panache to just about any dessert. The ingredients used to make the flames (alcohol makes the flame), also adds flavor and texture.
You need high alcohol content liquor. Use 151-proof rum, which ignites easily at any temperature. You want to avoid having to heat the alcohol before igniting it (necessary with most liquor. The fact is, this rum is so flammable, and you shouldn’t cook with it.
Use it to create a dramatic effect around a plated dessert. For example, use a biscuit cutter to cut round pieces of sliced pound cake or brownies. Place the dessert in the center of a small serving plate with enough of a lip to contain a small amount of liquid. Next, take a spoon and scoop to remove a small section from the center of the cake or brownie. This can be done ahead of time. Just before serving, fill the removed section with ice cream.
Then CAREFULLY pour about 1/2 ounce of 151 proof rum around the cake.
Prepare all the desserts and then arrange them on the serving table. It is important to note: You do not want to carry flaming liquid, nor are these appropriate for your guests to hold cocktail party-style. |
Once everything is set, make sure to warn guests to stand clear. Use a grill lighter to ignite the rum. It should burn off in about a minute. It will be a dazzling display that heats the brownie and softens the ice cream and creates a wonderful fire and ice contrast.
Give guests a small party favor as they leave, so they can remember your tea party. A party favor can be as simple as a white gift bag or satin pouch filled with chocolates or your favorite mini bag of loose leaf tea and an empty tea bag tucked inside.
