Fruit Tea Sandwiches

Orange marmalade or currant jelly spread between very thin slices of bread makes a good sandwich for afternoon tea.


3 tier stand for tea sandwichesTurkey, Swiss Cheese and Ham Tea Sandwiches

Directions : Spread bread slices with honey mustard sauce. Top with a slice of turkey, swiss cheese and ham to fit onto the sandwich. Then layer the lettuce and onion slice on top. Cut into small triangles.

Banana Nut Bread and Cream Cheese Sandwiches

Directions: Take your favorite banana nut bread and spread a layer with your favorite flavor of cream cheese. Top with another slice of banana nut bread. Cut into small triangles.


Salmon Tea Sandwiches

Directions: Mix one can of salmon, add one cup of bread crumbs, chopped pickle, moisten all with mayonnaise, spread between thin slices of bread. Cut in to triangles.

Mini Pumpkin Tarts

Ingredients

Directions - Place one gingersnap in bottom of each cupcake paper and place in cupcake baking pan. Pour prepared pumpkin pie filling into cups, over cookies.

Bake at 350 degrees for 30 minutes or until set. Chill over night. Top with cool whip and serve.

Tea Party Favors

Consider giving your guests some loose leaf apple or orange spice cinnamon tea in a cellophane bag. Wrap with a twisty tie covered by a ribbon and decorate with a cinnamon stick and acorn.

Your guests may also enjoy your own homemade loose leaf tea blend in small tins. A recipe follows for a special tea.

POTPOURRI TEA

1 cup good black tea
1/2 cup dried rose petals
2 tablespoons dried orange blossom
1 tablespoon dried orange peel, freshly grated
1 tablespoon cassia bark, crumbled
3 sticks cinnamon bark, crumbled
4 whole star anise
1 tablespoon ground nutmeg
1 teaspoon whole cloves, freshly pounded
Mix all ingredients in a mixing bowl with your hands. Store in airtight tins. Use one heaped tablespoon per pot. Brew for 4 minutes

ORANGE or EAU-de-COLOGNE MINT TEA

2 cups dried orange mint leaves
8 teaspoons china tea
1 teaspoon ground cloves
1 cup dried calendula petals
1 tablespoon dried orange rind
1 tablespoon dried lemon rind

This mixture can be stored in airtight containers for some time.

If you choose to prepare this recipe with green tea the water temperature should be 185 degrees and the brew time will be 3 minutes.

If you chose to prepare this recipe with a black tea the water temperature should be 212 degrees and the brew time will be 4 minutes.
