I just had a bridal shower tea party for my best friend and wanted to share a recipe that was a big hit. This is really easy and very refreshing
Sensational Peppermint Brownies
(remember York's slogan 'Feel the sensation'?)
1 1/2 cups margarine, melted
3 cups sugar
1 Tbsp. vanilla extract
1/2 cup cold green or black tea or mint tea
5 eggs
2 cups flour
1 1/2 cups Hershey's cocoa powder (unsweetened, meant for baking)
1 tsp. baking powder
1 tsp. salt
14 ounce bag small York peppermint patties (you'll have some left over--you
only need 24 of them.)
In a large bowl, mix together melted margarine, sugar, and vanilla. Add
eggs and tea. Mix thoroughly. In another bowl, blend flour, cocoa powder, baking
powder, and salt. Gradually add the flour to the egg tea mixture and blend
until thoroughly combined. The batter will be pretty stiff at this point.
Grease a 13 x 9 inch pan. (Use a metal pan; glass pans make them turn out
all weird!) Spread about half the batter in the pan. Arrange the peppermint
patties in a single layer on top of the batter. Smooth the remaining batter
on top of the patties.
Bake at 350 degrees for 50 minutes, or until the cake begins to pull away from the corners of the pan. Let cool completely in the pan. Cut into squares.
