The tea leaves are steamed anywhere between 20 seconds and 160 seconds. The time depends on several factors, including flavor, aroma and color. Longer steaming times reduce the color and taste of the tea. Shorter times help keep the tea in a natural state so most aim for steam time of 90 to 100 seconds.


The steamed tealeaves are cooled using low temperatures to preserve the taste and aroma as well as the vibrant color. As the leaves cool in a room temperature or controlled environment, they retain their robust, full-bodied flavors that are lost when exposed to high temperatures.


Pressing removes any traces of moisture or steam and is the final step before the tea leaves roll and twist. Rolling and twisting helps to release oils and breaks down other components to prepare for the shaping process of the tea leaf.


Final rolling process creates the unique tea-shape design and uses hot air circulating to store the leaves until they are ready for shipping.


Secondary Processing of Japanese Green Using the Roasting Method

Once the processed tea leaves are ready for shipping, the last step is to protect the integrity of the product until it reaches the destination. The roasting method keeps the green tealeaves in tact and free from deterioration.


Tea leaves are sorted by size, shape and weight, then placed into a roasting pan under high heat until they reach the optimal size. Ensuring that each tea leaf is similar in size helps to make certain that they blend perfectly. Pan roasting also helps to increase the flavor of the final product. After this process is complete, the leaves are packaged and ready for long-term storage or shipping.
